Sweet Potato in Madeira: More than an Ingredient
In Madeira, sweet potato is found in many homes, many small gardens, and many recipes. For us at Casa da Nati, it has a special place because it is part of the Bolo do Caco we prepare and share with our guests.
But sweet potato is more than an ingredient. It is also a story of family, neighbors, and sharing.
From our land to the table
Our mother has planted potatoes for many years. For a long time, we grew potatoes at home, like many Madeiran families do. It is simple work, but it takes care: preparing the soil, planting, waiting, and harvesting when the time is right.
When we have sweet potato from our own garden, we know where it comes from. We know who planted it, who cared for it, and how it arrived in our kitchen.
Sharing with neighbors
In Madeira, when we do not have an ingredient, we often talk to our neighbors. This is how life on the island has always been: one person helps another.
Sometimes our mother might give corn, for example, and our neighbors give us sweet potatoes. It is not a complicated exchange. It is a natural way of living in community, with trust and friendship.
For us, this also means we can always have sweet potato available to make Bolo do Caco. And we know it is regional sweet potato, grown here by people we know.
Batata inglesa and batata amarela
In Madeira, there are different kinds of sweet potato. In our home, we mainly use two: batata inglesa and batata amarela.
Batata inglesa is loved by many Madeiran people. It has a milder flavor and a texture that works very well in Bolo do Caco dough. Batata amarela is also used by many families, and it usually has a brighter color and a slightly sweeter taste.
Everyone has their own preference. Some families prefer one, and others prefer the other. The beautiful thing is that both are part of the way we cook.
The ingredient that changes the bread
In Bolo do Caco, sweet potato is essential. It helps make the dough softer and gives the bread that slightly sweet flavor, different from more common bread.
When we make Bolo do Caco at Casa da Nati, we are not only mixing flour, sweet potato, yeast, and salt. We are bringing a little piece of our land, our family, and the simple life between neighbors in Madeira to the table.
That is why, for us, sweet potato is never just an ingredient.
